Elderberry Jelly

We made jelly with our ripe elderberries from one big bush.

We picked 9lbs of berries which makes 3 batches, 3 cups of juice for each batch.

After washing, boiling, and mushing the berries, the juice strains out very slowly.

We added 4.5 cuts of sugar per patch (13.5 cups total), lemon juice, and butter.

From 9 cups of juice, we canned 13.5 three quarter pint jars. We have 2 more bushes and some unripe berries so we’ll try Elderberry Syrup next. Cheers to taste testing!
